In 1988 Hans purchased and opened Midsummer House Restaurant in Cambridge and operated for six years. He then took on the challenge of running the kitchens of the famous Sandy Lane Hotel, Barbados in the Caribbean.
In 2008 Hans returned to Cambridge and opened Cotto. A beautiful contemporary restaurant with glass walls that can accommodate 75 guests. He is today one of the hardest working, most hands on chef’s in the industry.
During his time here, Cotto has been listed several times in the top 100 restaurants in the UK.
If I could cook for anyone alive or dead who would it be? Pavarotti. I created his own style of pizza for him. Did you know the best bread in the world come from Iran? I used this recipe as a base for the pizza – a very thin crust flashed on a char-grill. One night he called me and told me he was not feeling too well and only to send five pizzas. The man like his voice, was unforgettable.
